Chia seed muffins

five tablespoons of natural chia seed

one teaspoon sea salt

one and a half cups canola oil

one and a half cups vanilla soy milk (or milk)

one and a half teaspoon baking powder

three cups of all purpose baking flour

three large eggs

two and a quarter cups evaporated cane sugar

two and a quarter teaspoon almond extract

1.        Preheat the oven to 350 Fahrenheit.

2.        Mix the dry ingredients all together.

3.        Whisk eggs and add soymilk, oil and almond extract and mix until everything is well mixed. Then add the liquid ingredients to the dry ones and mix these two with a spoon until it is all smooth. Then stir in the chia seeds.

4.        Finally fill foil baking cups of muffin tins full and bake everything at 350 Fahrenheit for 30 minutes. This recipe makes 6 muffins
