half teaspoon turmeric

one cup chopped onion

one regular size head of cauliflower, steamed

one teaspoon of kosher salt

quarter cup of chia seed

quarter teaspoon fresh grounded black pepper

three quarter cup quick cooking rolled oats

two and a half cups chickpeas

two teaspoon baking powder

1.        pulse the onion and the cauliflower in a food processor and chop both of them. Then remove the onion - cauliflower mixture from the food processor and place it in a bowl. Then, process the chickpeas until mostly pureed but leave the chickpeas a little chunky.

2.        take a larger bowl and mix the chia seeds with the pepper until well blended. Then add the onion cauliflower mixture and the chickpeas to the oat mixture and stir until completely combined.

3.        scoop quarter cup balls out onto parchment lined baking sheets and bake for 50 minutes to one hour at F450. Once baked, allow to rest the falafel for at least 20 minutes.
